CUVÉE VIEILLES VIGNES
This wine is made from Sauvignon vine, cultivated on a clay-with-flints soil, which are more than 40 years old. This wine works for about 8 months in casks made of 70% oak and 30% locust tree.
You will appreciate the aromatic and gustative complexity of this well structured, vivid and round vintage.
Our soils are worked more and more by hoeing to limit the use of weed killers.
The manure used comes from neighbouring farms.
The herbage between the rows promotes the development of microorganisms.
We have been practicing for several years a phytosanitary protection for the respect of the fauna and our terroirs.
The beginning of the vinification is done in stainless steel vats with temperature control. At the end of fermentation the wine is racked and placed in barrels of oak and acacia
then intervene the racking and then the collage followed by the reassembly of the fine lees to enrich this very mineral wine in complexity. It will age for about 8 months to enrich the wine with aromas of vanilla, white flowers, grilled coffee...
Then, we proceed the bottling and it will remain in the cellar to rest during a year before its commercialization.

Its golden colour will seduce you to open it as an aperitif with foie gras, fried langoustines or any other crustacean and or fish dishes.
